Shiitake Rubbed Flank Steak with Yakiniku Sauce

Ingredients
YAKINIKU SAUCE
1 cup soy sauce
½ cup light brown sugar
¼ cup mirin
¼ cup water
1 tablespoon miso paste
2 teaspoons crushed red pepper
2 teaspoons ginger powder
2 garlic cloves, grated
FLANK STEAK
3lbs flank steak
4 tablespoons shiitake powder or 1 oz of dried shiitakes ground in a food processor
2 tablespoons light brown sugar
2 tablespoons kosher salt
1 tablespoon coarse pepper
6 scallions, thinly sliced
3 tablespoons sesame seeds
Preparation
- Add soy sauce, sugar, mirin, water, miso paste, red pepper, ginger powder and garlic to a small saucepan over medium heat. Whisk to dissolve sugar. Simmer for 10 minutes until reduced and the sauce has thickened. Remove from heat and set aside.
- Add shiitake powder, sugar, salt and pepper to a small bowl. Mix to combine. Season steak liberally with rub making sure it is fully coated.
- Heat grill and cook steak about 6 minutes per side or until desired doneness. Remove from heat and let rest for 10 minutes. Slice and glaze with yakiniku sauce and garnish with scallions and sesame seeds.
