Ingredients

LAMB CHOPS

12 lamb chops
Kosher salt
Pepper
2 limes, zested
Coarse sea salt

RED MISO SAUCE

2 cups red miso paste
1 cup granulated sugar
½ cup sake
½ cup mirin
1 teaspoon yuzu juice (sub: lemon juice)

Preparation
  1. Add miso paste, sugar, sake, and mirin to a small saucepan over medium heat and whisk until sugar is dissolved and sauce is smooth. Bring to simmer, reduce heat to low and simmer until sauce is reduced and thickened, about 10-15 minutes. Stir in yuzu and remove from heat and set aside.
  2. Season lamb chops all over with salt and pepper. Heat your grill to high and add lamb chops flipping every 2 minutes and brushing with the glaze until desired doneness. Remove from heat and let rest for 10 minutes. Serve with remaining sauce garnish with lime zest and maldon/coarse sea salt.
